Mayonnaise

Ingredients

Salt

2 tablespoon

  • 1. Grind 1/2 c. mustard seeds with 2 tbl. dry mustard.
  • 2. Stir in 1/2 c. water and let rest at room temperature overnight.
  • 3. Move mixture to blender and add veingar, sugar, salt, and garlic. Liquefy. Add more vinegar if nessecary.
  • 4. Store in fridge.
  • 5. Combine 1 egg yolk, 1 1/2 tsp mustard, salt to taste, and juice from half a lemon into a bowl and start blending with a hand blender.
  • 6. While the blender is running, add 1 1/4 c. oil very slowly. Keep whipping until thick.
