  • 1. Break egg open a cup. Keep the yolk inside the egg shells. Move the yolk between the two egg shells, letting the egg white fall off.
  • 2. Combine 1 egg yolk, 1 1/2 tsp mustard, salt to taste, and juice from half a lemon into a bowl and start blending with a hand blender.
  • 3. While the blender is running, add 1 1/4 c. oil very slowly. Keep whipping until thick.
